This is about the time when squash flows heavy. It’s so bulky that a meal loaded with it easily hits the 80% local mark (with non-local ingredients to pull it together, as I usually do). Here was my dinner recipe:

Lots o’ squash

Greens

Onions

Peppers

Curry powder and fresh cilantro

Peanut sauce: peanut butter, maple syrup, salt, apple cider vinegar

All this was cooked up in coconut oil and I threw some noodles in to fill it out. Tasty!
