Summer Salads

With the heat returning, salads for dinner keep sounding better and better. Last night, we had a salad with greens and nectarines. (There are A LOT of local nectarines in the store right now.) Tonight, I’m going to focus dinner around tomatoes. My grandma brought me quite a few from her garden, and we’ve been slicing them up and eating them as our side dish. I found an awesome recipe for creamy tomato sauce to serve with broiled polenta. The full recipe’s on the Patch’s Facebook page under my daily “What’s for dinner?” heading. It promises to be quick, easy, and yummy — my main requirements for cooking after a long day at work. Now I just have to figure out which local wine will go best with the dish. Ah, decisions, decisions!
