Tantalizing tuna, luxurious guac, Yum-Yum sauce with a touch of adobo’s smoky 
heat. Wrapped in a crunchy corn shell…Taco Tuesdays will never be the same! 

Serves 4-6 

¾ lb sashimi-grade Ahi tuna steaks, cut into 
½ -inch dice 
1 small shallot, finely sliced 
3 Tbsp soy sauce 
1 tsp sesame oil 
1 tsp mirin 

Yum-Yum Sauce 
½ cup mayonnaise 
1 ½ tsp ketchup 
1 tsp guajillo chile pepper adobo sauce 
1 tsp rice vinegar 
1 tsp garlic powder 
1-4 tsp water 

3 avocados 
½ small red onion, finely diced 
3 Tbsp finely chopped cilantro 
1 jalapeño pepper, de-seeded, finely diced 

2 garlic cloves, minced 
1 lime, juiced 
½ tsp sea salt 

Yellow Corn Taco Shells 
1 bunch chives, finely chopped 
2 Tbsp sesame seeds 

Layer guacamole and poke into taco shells. Drizzle with Yum-Yum Sauce and sprinkle on chives and sesame seeds.
