3 lbs Chuck Roast 

1 tsp each kosher salt and freshly ground pepper 

½ tsp smoked paprika 

½ tsp garlic powder 

½ tsp onion powder  

½ tsp dried thyme 

½ tsp dried oregano 

1 bay leaf 

2 Tbsp olive oil 

4 garlic cloves, chopped 

1 medium onion, chopped 

2 medium potatoes, chopped, 

1 carrot, chopped  

3 cups beef broth 

 

Mix all spices and salt pepper together. Pat roast dry and rub with spice mixture.  

Add oil to Instant Pot  and using Saute setting on High Heat, add beef once oil is hot. When beef is browned on both sides, add remaining ingredients, and select Pressure Cook setting, cooking on high for one hour. Let stand for at 10 minutes before opening lid. Adjust liquid jus with salt and pepper if needed – be careful, it’s hot!
