Recipe for Instant Pot by Randi Pratini

Any boneless cut of pork will do, shoulder or butt are great! I leave it in one piece but it can be cut into chunks. 
 
Ingredients are up to you, depending on size of the cut of meat plus how savory and full flavored you might enjoy this treat! 
 
Season with salt & pepper. With Instant Pot in sauté function, sear the meat until well browned, using a piece of fat from what might be cut off, olive oil or other oil. I leave quite a bit of the fat on the meat, as it adds such wonderful flavor! 
 
Add the juice of one orange and put the rind in the pot as well along with lots of chopped garlic, toasted cumin seed, some oregano, a chopped onion and possibly a jalapeño or chipotle pepper. Lime juice makes another tasty addition. 
 
Pressure cook on high for 30 minutes, then allow the pot to release the steam itself. 
 
Once cool enough to handle, remove the meat from the broth and shred. When ready to eat, heat a cast iron pan over medium high on the stove, using a light coating of oil or fat from the pork, cook the meat until nice and crispy. Once browned to your liking, remove the pork and set aside, take the juices the pork cooked in and reduce to a desired consistency of deliciousness! 
 
Serve the pork with this juice, flamed tortillas, chopped cilantro, chopped onion, lime slices and a favorite salsa!
