1 whole chicken 

12 oz your favorite beer  

3 Tbsp olive oil 

1 tsp dried sage 

1 tsp dried rosemary 

1 tsp dried parsley 

1 1/2 tsp each Kosher salt & fresh ground pepper 

3 garlic cloves, chopped fine 

1⁄4 cup za’atar spice  

2 Tbsp brown sugar 

3 Tbsp olive oil 

Preheat oven to 375 degrees. 

Mix olive oil, sage, rosemary, parsley, a bit of salt and pepper and garlic and rub all over the chicken. 

Mix za’atar, brown sugar and remaining salt and pepper. Brush chicken with olive oil and then pat chicken with the za’atar mix. 

The chicken needs to stand upright in the oven, so you may need to remove a rack in your oven and lower a rack near the bottom.  

Open the beer can, and place it on the baking sheet (don’t pour out the beer!). Open the rear cavity of the chicken and carefully place it over the can, so only about an inch of the can is showing. 

Place the chicken in the oven and roast to an internal temperature of 165 degrees. This may take about 75-90 minutes, depending on the size of the bird. Let it rest for about 15 minutes before serving.
